Host: 👩‍🍳 Zuera Burn

Ingredients:

    Rice

    • 400 g water
    • 200 g rice, rinsed
    • 1 pandan leaf, tied into knot

    Spices

    • 1 tbsp coriander seeds

    Omelette

    • 4 eggs
    • 2 tbsp mayonnaise
    • 20 g yellow onion, thinly sliced
    • 1 red chilli, thinly sliced
    • 1 green chilli, thinly sliced

    Beef Tamarind Soup

    • 60 g shallots, thinly sliced
    • 5 garlic cloves, thinly sliced
    • 10 g ginger, sliced
    • 10 g galangal, sliced
    • 1 dried chilli, cut in half
    • 2 red chillies, thinly sliced
    • 4 bird’s eye chillies (cili padi)
    • 3 pieces tamarind
    • 1200 g water
    • 1000 g beef, sliced
    • 1 tsp salt
    • 30 g gula Melaka, cut in pieces (optional)

    Preparation

    Rice

    1. Place a steaming bowl on mixing bowl lid, weigh in water. Add rinsed rice and pandan leaf to it. Place in Varoma dish. Set aside (see tips).

    Spices

    1. Place coriander seeds in mixing bowl, dry roast without measuring cup 10 min/120°/speed 1 (see tips).Meanwhile, line Varoma tray with baking paper (see tips).
    2. Let temperature drop to 60°C (approx. 5-10 minutes), mill 30 sec/speed 8 gradually. Set aside for later use. Rinse mixing bowl.

    Omelette

    1. Place eggs and mayonnaise in mixing bowl, mix 30 sec/speed 8. Transfer egg mixture to prepared Varoma tray. Sprinkle sliced yellow onion, sliced red chilli and sliced green chilli. Set aside. Rinse mixing bowl.

    Beef Tamarind Soup

    1. Place shallots, garlic, ginger, galangal, dried chili, red chillies, bird’s eye chillies, tamarind, water, beef slices and reserved coriander powder in mixing bowl. Set Varoma into position, cook 20 min/Varoma/reverse/speed spoon(see tips).
    2. Remove Varoma tray. Add salt and gula Melaka in mixing bowl. Place Varoma dish back into postion, continue to cook 20 min/Varoma/reverse/speed spoon. Serve beef tamarind soup with rice and omelette.

    Tips:

    Prolong cooking time if omelette is still runny.

    Use a steaming trivet to prevent blocking all steams which allows the steam to come up and cook the food thoroughly. Use smaller or round steaming bowl for steam to release nicely.

    Make sure mixing bowl is fully dry during step 2.

    Crumple baking paper and lay it down on top of Varoma tray for omelette.
