Banana Coffee Crumble Tart

Banana Coffee Crumble Tart

Tart Shell

Ingredients:

  • 300g flour
  • 100g icing sugar
  • 170g salted butter
  • 1 egg

Preparation:

  1. Preheat oven at 180℃.
  2. Place flour, icing sugar, and salted butter into a clean and dry mixing bowl. Mix Turbo/1 sec/2-4 times until crumbly.
  3. Add egg into mixing bowl. Turbo/1 sec/2 times until combined.
  4. Roll out dough. Press evenly on tart mould and place in chiller to rest for 15 minutes.
  5. Bake at 180℃ for 10 minutes.

Ganache

Ingredients:

  • 250g dark chocolate
  • 90g coconut cream

Preparation:

  1. Add dark chocolate into mixing bowl and blitz at 5 sec/speed 8.
  2. Scrape down sides and add coconut cream into mixing bowl. Blend for 2 min/ 50℃/Speed 5.

Banana Cake

Ingredients:

  • 4 bananas, lightly mashed
  • 225g plain flour
  • 130g unsalted butter, room temperature
  • 140g sugar
  • 2 eggs
  • 2tsp vanilla extract
  • 2tsp baking powder
  • 1tsp bicarbonate soda
  • 3g cinnamon powder
  • 100g buttermilk

Preparation:

  1. Preheat oven to 180℃.
  2. Add mashed bananas, flour, butter, sugar, eggs, vanilla extract, baking powder, bicarbonate soda, cinnamon, and buttermilk into mixing bowl. Blend for 20 sec/speed 5.
  3. Pour into 8×8 inch tray.
  4. Bake for 15 to 20 minutes at 180℃ or until wooden skewer inserted comes out clean. Leave it to cool for 30 minutes.

Caramel

Ingredients:

  • 250g sugar
  • 30g butter
  • 280g cream
  • 1 banana, sliced

Preparation:

  1. To guarantee the success of recipes using Sugar Stages mode, the ingredients used must exactly match the quantities and descriptions specified. The recipe should also be cooked immediately after placing the ingredients in the mixing bowl.
  2. Place sugar, butter, and 100g cream in mixing bowl then start Sugar Stages.
  3. Add remaining 180 g cream and, without measuring cup, mix 2 min/speed Spoon  then cook 3 min/Varoma/speed 2. Transfer to a warm glass jar with airtight lid (see tip), leaving approx. 5 mm gap at the top. Make sure that rim of jar is clean and close immediately then set aside.

Coffee Crumble

Ingredients:

  • 70g salted butter
  • 5g coffee grounds
  • 70g plain flour
  • 70g sugar
  • 1 tsp salt

Preparation:

  1. Preheat oven to 180℃.
  2. Add butter and coffee grounds into mixing bowl. Blend for 4 min/ 70℃/Speed 1. Pour into bowl and let it set in fridge.
  3. Place set coffee butter, flour, sugar, and salt into mixing bowl. Turbo/1 sec/ 3 times.
  4. Transfer crumble to tray and bake at 180℃ for 15 to 20 minutes.

Macadamia Nut Drizzle

Ingredients:

  • 50g macadamia nuts
  • 30g oil
  • 10g sugar
  • 1 tsp salt

Preparation:

  1. Preheat oven to 180℃. Roast macadamia nuts for 7 to 10 minutes until golden.
  2. Add roasted macadamia to mixing bowl. Blend 1 min/speed 8.
  3. Scrape down sides and add oil, sugar, and salt into mixing bowl. Blend 1 min/Speed 9.

Coconut Ice Cream with Roasted Peanuts

Ingredients:

  • 50g sugar
  • 200g coconut water with coconut bits, frozen
  • 100g milk,
  • 200g whipping cream
  • 20g peanuts, roasted

Preparation:

  1. Add sugar, blend for 10 sec/Speed 10.
  2. Add frozen coconut water, milk, and cream into bowl. Turbo/1 sec/ 2 times.
  3. Place mixture into bowl and let it freeze.
  4. Fold in peanuts at 2 hour intervals.
